<note>ABSTRAK
Zat besi merupakan mineral mikro yang paling banyak terdapat dalam tubuh manusia dan hewan, memiliki fungsi sebagai metabolisme energi, untuk kemampuan belajar dan sebagai sistem kekebalan. Besi bekerja sama dengan rantai protein pengangkut elektron di dalam tiap sel, yang berperan dalam langkah - langkah akhir metabolisme energi. Salah satu tumbuhan yang mengandung zat besi adalah daun singkong. Daun singkong merupakan jenis tumbuhan yang memiliki kandungan protein, kalsium, fosfor, zat besi, vitamin B1, vitamin B2, vitamin C dan karoten. Metode yang digunakan untuk menentukan kadar zat besi adalah Spektrofotmetri UV-Vis. Sampel daun singkong yang telah kering, dihaluskan, dan diayak, diekstrak dengan metode maserasi dan infundasi. Pada penentuan kadar zat besi dalam sampel secara spektofotometri UV-Vis menunjukan bahwa kadar zat besi dalam daun singkong ekstrak maserasi lebih besar dibanding kadar zat besi dalam daun singkong ekstrak infundasi yaitu masing – masing kadar zat besi dalam daun singkong ekstrak maserasi adalah 13,801% b/b dan daun singkong ekstrak infundasi 6,312% b/b.

ABSTRACT
Iron is a micro mineral that is most abundant in the human and animal bodies, has a function as energy metabolism, for learning abilities and as an immune system. Iron cooperates with the electron-transporting protein chains in each cell, which play a role in the final steps of energy metabolism. One of the plants that contain iron is cassava leaves. Cassava leaves are a type of plant that contains protein, calcium, phosphorus, iron, vitamin B1, vitamin B2, vitamin C and carotene. The method used to determine iron content is UV-Vis Spectrophotometry. Cassava leaf samples that have been dried, mashed, and sifted, were extracted by maceration and infundation methods. In determining the iron content in the sample by UV-Vis spectrophotometry, it showed that the iron content in the macerated cassava leaves was greater than the iron content in the infunded cassava leaf extract, namely, each iron content in the macerated cassava leaf extract was 13.801% w/w and cassava leaf extract infundation 6.312% w/w.</note>
