Analysis of β-carotene levels inextractJuwet (Syzygium cumini) fruit by UV-Vis spectrophotometry. The purpose of this study was to determine the levels of β-carotene inextractJuwet Fruit (Syzygium cumini) by UV-Vis spectrophotometry. Juwet Fruit (Syzygium cumini) samples were extracted with acetone solvent. The extract obtained was extracted again with a petroleum ether solvent, then saponified with a 15% KOH solvent in methanol. The extract is liberated with distilled water. The extract obtained was dried with anhydrous Na2SO4. The extract obtained was analyzed qualitatively using Thin Layer Chromatography, and quantitative analysis using UV-Vis spectrophotometry at a wavelength of 332.1539 nm obtained an average level of β-carotene in juwets1,25mg.This is supported by the T-test with a significance value of juwet fruit resulting in a value of 0.000,then 0.000 <0.05.
