<note>Thiamin HCl is a very volatile vitamin. Its stability is influenced by pH, temperature  and  processing.  One  of  the  sources  of  Thiamin  HCl  obtained  by Indonesians  is  rice,  which  is  the  staple  food  in  Indonesia.  The  washing  process that  is  carried  out  before  the  cooking  process  allows  Thiamin  HCl  to  dissolve  in water.  Thiamin  HCl  is  soluble  in  water  and  alcohol.  Can  be  damaged  by  heat, especially  in  the  presence  of  alkalis.  In  dry  conditions,Thiamin  HCl  is  stable  at 100°C for several hours while humidity will accelerate its destruction.This study aims to determine differences in levels of Thiamin HCl in rice washing water with variations in washing water temperatures of 15°C, 28°C, 37°C and 50°C which were carried out quantitatively using UV-Vis Spectrophotometry. The method of analysis of Thiamin HCl levels in rice washing water includes the absorbance   test   of   Thiamin   HCl   pro   analysis,   determining   the   maximum wavelength, determining operating time, and sample testing. The sample used rice circulating in the Tanjung Mojokerto market with variations in the temperature of the washing water for 2 minutes.Based on the research results, the maximum wavelength of Thiamin HCl is   615nm   for   10ppm-40ppm.   Operational   time   for   0-15minutes   with   an absorbance of 0.36. The linearity data analysis results obtained from the equation y  = -0,0219+  (0.0216)  C  with  a  relation  efficiency  of  0.9998.  Thiamin  HCl content in rice washing water with variations in washing water temperature at 15 °C is 0.0444gr /25gr, 28°C is 0.0261gr /25gr, 37°C is 0.0426gr /25gr and 50°C is 0, 0347gr/25gr.From this study, it was concluded that there was  a significant difference in vitamin B1 levels between rice washing water and watertemperature variations of 15°C, 28°C, 37°C, and 50°C which were influenced by the temperature of the washing water.</note>
